It's been a while..

Hi guys!
Sorry it’s been so long, but with school work and everything I haven’t found the time. It was half term break here in Belgium two weeks ago, I went skiing with some friends and it was so much fun. The view was just breathtaking so I thought I’d let you have a look for yourself, amazing right?

Snicker & Peanut Butter muffins

We’ve all had one of those days where you just crave one thing: a muffin. Well for me today was one of those days. So guess what? I decided to make some!

You’ll need:

-250g self-raising flour
– 85g golden castor sugar
–  pinch salt
– 160g peanut butter
– 60g unsalted butter, melted
– 1 large egg, beaten
– 175 ml milk
– 3 x 65g Snickers Bars & 50g chocolate, chopped

Preheat oven to 200 °C – gas mark 6.

Stir together flour, sugar, baking powder and salt. Then add peanut butter, and mix until you have a bowl of coarse crumbs (as shown above).

Add melted butter and beaten egg to the milk, then gently stir this into the bowl.
Mix in the chopped Snickers bars & chocolate, and dollop a spoonful into muffin cases.


Bake for 20-25 minutes and leave to cool.

And there you have it! Super tasty muffins done in no time!

A bit about me..

Hiya everyone!

So seen as I’m home ill, I thought this would be a good time to write a bit about myself so you guys can get to know me.

As you know, I’m a 15 year old student who’s new to this whole bloggin’ craze. I’ve got to admit, blogging has taken to me (and any tips would be great!). My mum thought it would be a good idea for me to start this blog, and she was right ( as she is most of the time). We’ve set up this new “tradition” in my family where every Saturday, I cook dinner and dessert and I love it cause it let’s me discover loads of new meals that I’d of never cooked otherwise! For me, the best part about cooking is that you can always eat what you made after.. haha!

Other than cooking, swimming is a big part of my life. I started because my two older sisters were swimming and , being the youngest, I basically wanted to do whatever they did. Since the age of 5, the water is like a part of me. I don’t really know how to explain, it just is. The swimming pool is the one place I know I can always be myself. You don’t have the pressure of being like everybody else like you do at school. Everybody is there for the same reason, and that reason is simple: we love to swim. Then over the years, with my dad’s huge support, I started getting good at it. More races, mores trainings.. Then the races started getting more and more important, and I got into the Belgium Championships. And that’s when I realized, that I had finally found the one thing I was good at. The training all year, the getting up early, the stress, the fatigue, it’s all worth it. Cause it’s also thanks to swimming that I met some of the most amazing people and friends I’ll cherish all my life.

Wow, I hadn’t realized I’d babbled on for quite so long, sorry about that! I never knew it would be quite so easy to speak to total strangers.. If you’ve taken the time to read all this, thank you. You’ve made my day that hadn’t started so well, much better.

Eton Mess inspired Yoghurt & Raspberry

Try this simple dessert for your Saturday meal. Uber quick and easy to make, it’ll be done in no time! All you need is:
– 250g low fat Greek yoghurt
-200g fromage frais
– raspberries & strawberries
– raspberries coulis
– crushed meringues
Just mix the fromage frais and the greek yoghurt, then add the fruit, the coulis and the crushed meringues and your finished! How easy is that?
